  • pH Stability: Best suited for neutral to slightly alkaline applications (pH 4.0–7.0), such as ice cream, dry-mix beverages, and confections. 
  • Light Sensitivity: Spirulina colours are sensitive to light; hence, opaque packaging is recommended to maintain colour integrity.  
  • Organic Certification: Organic-certified Spirulina options are available, aligning with the growing consumer preference for organic products. 

Everzure™ Galdieria 

Givaudan’s Everzure™ Galdieria is a phycocyanin-rich natural blue colour derived from the microalgae Galdieria sulphuraria. This innovative colourant is produced through a controlled fermentation process, followed by a gentle water extraction.  

Key Features: 

  • Acid Stability: Unlike traditional spirulina-based colours, Everzure™ Galdieria maintains its vibrant hue in acidic environments, making it suitable for applications like beverages, gummies, and hard candies. 
  • Heat and Light Stability: It exhibits robust stability under various processing conditions, ensuring consistent colour retention. 
  • Regulatory Approval: Recently approved by the US FDA, with additional petitions in process in Europe and the UK, Everzure™ Galdieria is poised to become a leading choice for natural blue colouring. This product has not yet been approved in Canada.
